Keto Chocolate Chia Seed Pudding
– 2 tablespoons of chia
– 1/3 cup unsweetened coconut milk
– 1/4 cup cold black coffee
– 1 teaspoon cocoa powder
– 1 teaspoon monkfruit (or sweetener of choice)
1. Add all dry ingredients to a bowl
2. Mix coconut milk and coffee together and pour over dry ingredients
3. Mix ingredients right away to ensure chia seeds don’t settle or clump
4. Refrigerator for a minimum of 1 hour, best served after 4 hours.
5. Top with berries and enjoy!
